Whole Husks or Powder?

Both work; they behave differently. Powder hydrates almost instantly and forms a stiffer, more uniform gel; whole husks hydrate slower and give a softer gel that many bread bakers prefer for a more open crumb. Converting between them is a weight game: use about 85 percent as much powder as whole husk (10 g whole husk → 8.5 g powder), or 15 to 20 percent more whole husk when a recipe specifies powder.

  2. Whisk psyllium into the water briskly and let it gel for 1 to 2 minutes.
  3. Combine the gel with the dry ingredients and mix or knead into a dough.
  4. For yeasted doughs, allow a hydration rest — 15 to 45 minutes lets the flours and psyllium fully absorb water and makes the dough dramatically easier to handle.

The Rules That Prevent Most Failures

Bake Longer Than Feels Right: Psyllium bakes hold water, so the toothpick test lies — it can come out clean while the interior is still setting. Trust a deeply browned crust, a hollow sound when you tap the bottom, and best of all an instant-read thermometer: gluten-free psyllium loaves are done at an internal 205 to 210°F (96 to 99°C). Cool Completely Before Slicing: The crumb finishes setting as it cools. Slice warm and you get a gummy smear; wait at least an hour — ideally to room temperature — and you get bread.

Don’t Exceed the Recipe Amount: More psyllium is not more structure; past the working range it’s density and gum. Stick to tested ratios.

Troubleshooting

Dense, Tight Crumb: Too much psyllium or too little water. Recheck the ratio against the table and your hydration math — this is where the scale pays for itself.

Gummy Streaks or a Wet Band at the Bottom: Underbaked, or sliced too early. Thermometer to 205–210°F, then a full cooling hour. Almost never anything else.

Can I Substitute Xanthan Gum for Psyllium Husk? Usually, but differently: xanthan is a far stronger binder at tiny doses (about ¼ teaspoon per cup of flour versus a tablespoon of psyllium), and it produces a denser crumb without psyllium’s pliable chew.
